Our cuisine is born from respect for ingredients and taste. We work closely with local producers, fishermen, and our Finca de Uga to select the best from our land, always from a sustainable and responsible perspective. Each dish is a tribute to Canarian gastronomy, where rice, meats and fish come to life with authenticity, tradition and exceptional quality.
Every morning we receive fresh fruit, vegetables, cheese, meat and dairy from Finca de Uga and other local producers. We work with seasonal, respectfully cultivated products to offer you food that tastes real and stays true to its origin.

Our restaurants are mainly supplied with products from Finca de Uga and local, sustainable suppliers, ensuring freshness and origin under the “ROSA Origins” seal.
Finca de Uga is an agricultural and livestock farm in the heart of Lanzarote. There, we raise Majorera goats, Canarian sheep and Jersey cows, whose milk is used to produce artisanal cheeses and yoghurts. On more than 70,000 m², we also grow fresh fruits and vegetables—a reflection of our commitment to quality, tradition and the environment.
