Very few women have reached the gastronomy heaven that Michelin Stars represent, and María Marte is one of them. Moreover, it is even more relevant as the Madrid Club Allard – where this Dominican Republic chef works – has two Michelin Stars, and she is the only chef in the Spanish capital who has received the Spain National Gastronomy Award.
María Marte started her carreer at the Club Allard as a dishwasher. A first entrance in this prestigious restaurant that represented a dream for the girl who, as a child, used to cook real dishes to surprise her friends, instead of using a toy kitchen. A dream for the woman who looked at the cooks to learn from them, and who has had the opportunity to work under the orders of the prestigious chef Diego Guerrero, the best mirror to look at. He saw her efforts, fight and perseverance and rewarded it by giving her the opportunity she deserved – a position as his right hand in the kitchen. After his departure from the restaurant in 2013, María Marte passed to hold the position of chef of the Club Allard in his place, and got from this new position the best moments and highest recognitions of her professional carreer.
This introduction about María Marte is, beyond any doubt, the beginning of a gastronomy adventure which the most demanding palates will want to be involved in. And this month of October, they will be able to do so at our Princesa Yaiza Suite Hotel Resort, by attending the Gastronomy Days with María Marte – 05th to 07th of October at the gourmet restaurant Isla de Lobos. The concept of María’s cuisine at the Club Allard is to always prepare creative and elaborated dishes, displayed with a great care and delicacy, an essence that gathers together the feeling of the Canarian gastronomy and the local produces of the Lanzarote-based Finca de Uga – a farm based in the local town of Uga.
The tasting menu prepared for these gastronomy days will include the most famous dishes of the Club Allard, as well as creations specifically designed for the occasion: the night will start with an appetizer – a shooter of butterfish and white esparragus – and two starters: a Cupcake of quail egg and truffle and a Salad of lobster with mango guacamole.
The main dishes will be a Rice from the Sea, a Turbot with Pil-Pil (a sauce made with smoked olive oil – arbequina variety -, garlic and small hot peppers) and Codium, Wagyu Picanha – a cut of beef sirloin – and the famous Hibiscus Flower with Pisco Sour.
And finally two desserts: Chocolate cream cake and Sweet tentation.
